These MASCARPONE and ALMOND COOKIES are a great summertime BREAKFAST.

I would definitely bring a plate of these and a nice coffee outside, sitting on my porch. The inspiration for these cookies came from a sleepless night. After multiple attempts to fall asleep, I gave into the circling ideas in my head and I scurried to the kitchen. I was craving some mascarpone and almond action and since my kids have been asking to bake some cookies recently, and here we are. I added a bit of vanilla caviar because that always makes everything better.

Anyway, let’s get to the recipe.
The Best Breakfast with Mascarpone and Almond Cookies
Ingredients
- 250 g almond flour 2 cups
- 250 g mascarpone cheese 8.8oz
- 20 ml whipping cream 1 1/2 Tbsps
- 125 g powdered sugar 1 cup
- vanilla caviar
Instructions
- Mix almond flour with sugar.
- Add the mascarpone cheese, the whipping cream, and vanilla caviar until all mixture is amalgamated very well.
- Shape balls no bigger than a walnut and flattens them slightly.
- Place them on a baking sheet with baking paper.
- Sprinkle the flattened balls with powdered sugar and bake in a pre-set oven at 350F for 20-30 minutes
Notes
If you’re using a convection oven, which circulates hot air for even cooking, you may need to reduce the cooking time compared to a conventional oven. Convection ovens tend to cook food faster, so it’s a good idea to start checking for doneness a few minutes earlier than the recommended time. ENJOY!

Hi there, I just made these and they did not turn out at all like your picture, unfortunately. After 12 minutes, the cookies were burnt all along the edges and completely flat. I followed the instructions to a tee. Any idea on what I should try differently? Eggs, baking soda, baking powder? Any help would be appreciated, thank you!

In these circumstances, I recommend lowering the oven temperature and the cooking time. For 20 minutes, try at 360.
