The Tiramisu originated in the late 1960s at the restaurant at Beccherie of Treviso, and it is known as “Tiramesu”.

It is surrounded by medieval walls and traversed by pretty canals; penetrating through the narrow medieval streets, we can admire the pastel-colored houses with Gothic windows.

Tiramisu is a classic Italian dessert loved for its creamy texture and rich coffee flavor. Here's a traditional recipe for making tiramisu:

Mascarpone Cream

    • Work the egg yolks in a mixer with 100g (3.5 oz) sugar at maximum speeds until the mixture is light and smooth. 
    • Add the mascarpone cheese little by little with the mixer in action, amalgamating it very well to avoid lumps.
    • In a clean bowl, whip the egg whites, adding the rest of the sugar.
    • Once the egg whites are whipped, incorporate them into the mascarpone mixture with a spatula from top to bottom until you get a smooth cream.

Assembling

    • In a baking dish, pour one-third of the mascarpone cream.
    • One at a time, dip the ladyfingers in the espresso coffee until soaked but not soggy, and lay them down in the mascarpone cream.
    • Then, cover the ladyfingers with a third of the mascarpone cream.
    • This is the second and final basis for the final layer of ladyfingers soaked in coffee.
    • Top it with the last third of the mascarpone cream and store it in the fridge. Before serving, dust with the cocoa powder.

Note

  • Use room-temperature mascarpone cheese to ensure it blends smoothly into the egg yolk mixture.
  • Tiramisu tastes best when it's had some time to chill in the refrigerator, allowing the flavors to develop. It can be made a day in advance for convenience.
