The sweetened almond filling frangipane, commonly known as almond cream, is a flexible component of the classic pastry kitchen.

Ingredients
  

  • 200 g of sugar 1 cup
  • 200 g of butter 14 tbsp
  • 200 g of almond flour 2 cups
  • 60 g of flour 00 1/2 cup
  • 2 eggs

Instructions
 

  • Whisk the butter (kept at room temperature) and the sugar together until it is frothy.
  • In another bowl, beat the eggs with a fork and add them to
    the frothy mixture.
  • Keep working with the whisk. When the eggs are fully
    incorporated, add the almond flour and 00 flour.
  • Cook the mixture over low heat in a steel saucepan and
    continue stirring until it boils.
  • Remove the cream from the stove.
  • Let it finish cooling at room temperature and then refrigerate.

Notes

The frangipane cream should be stored in the refrigerator for a few days covered with cling film for food.
